What are some of the most interesting side trips or stops along the Katy Trail and the best places to stay? I'm riding my bike and my wife is driving and meeting me at the end of each day and we would like to have fun places to stay and things to see/do. Any suggestions?

You've got lots of options. I would read some of the trip re-caps on this site's home page to get an idea of what different cyclists have enjoyed the most. Personally, my top 5 favorite stops were the capitol/governor's mansion via pedestrian bike bridge in Jefferson City; Hotel Frederick in Boonville; a cold drink on the Mighty Mo at Cooper's Landing in Easley; hanging out at the biergarten at Augusta Brewing Company; and enjoying the hospitality and breakfast at Joey's Birdhouse in McKittrick.

Klondike Park near Augusta is a great place to camp.

The State Capitol Building in Jefferson City has some wonderful art. There are tours, probably on hourly that you do not need a reservation for. The building is open 8-5 every day except maybe Christmas and one or 2 other major holidays. Also in Jefferson City, Central Dairy (they close at 5) serves huge portions of great ice cream. The Missouri State Penitentiary (MSP)tours are very popular. And if you love unique night life, the Historic Eastside in Jefferson City is getting exciting. Check on whether there will be a comedy night at Avenue HQ, or who will be at The Mission at the corner of E. HIgh and Ash. They have Open Mic night on Wednes. and alternate comedy and music. My husband and I live a couple of blocks away and attend their musice Open Mic every other Wednes. and we've enjoyed incredible talent. You can get a great meal at Prison Brews or O'Donohue's Seafood and Steak House right around the corner. Plan to spend a couple of days here in Jefferson City. Oh, and we now have Uber and maybe Lift, so you can get around town.

Definitely Hermann. It's worth the couple of sideways miles it takes to get across the river. Be prepared for some hills while taking in the sights.
